Carrot cake..


This cake is very delicious. Fresh out of the oven and the whole house has a nice fragrance. There’re carrots in it so it healthy, right? Wrong! It’s not good for us but dang it’s good. Let’s heat up that oven!

Moist, delicious and hard to resist

We’ll need:

  • 2 eggs
  • 100 g butter
  • 150 g brown sugar
  • 125 AP flour
  • 1 Tsp baking powder
  • 1 Tsp ground cinnamon
  • ½ Tsp baking soda (sodium bicarbonate)
  • 1/4 Tsp salt
  • ½ Tsp ground cloves
  • 175 g carrots
  • Optional: 25 g walnut kernels
  • Powdered sugar for decoration

How to:

  • Separate the eggs; yolks in one bowl, whites in another
  • Melt the butter
  • Whip the yolks with brown sugar and add the melted butter. Mix it into a dough
  • In a separate bowl combine the flour, baking powder, ground cinnamon, baking soda, salt and ground cloves and mix it well. Then add the “cake-mix” to the dough
  • Peel the carrots and grate them. If you want walnuts kernels, chop them up now. Add carrots (and nuts) to the dough and mix gently
  • Whip the egg whites till you get stiff peaks. Gently fold in the whites in the dough
  • Pour the dough into a greased and floured baking pan (in this case 20 x 20 cm)
  • Bake the cake at 175oC for 45 min
  • Let the cake cool off. Sift powdered sugar over the cake. Or make an icing if you like. Or eat it as is. Anything goes 😉

It’s time to put up the feet, give yourself a well earned pad on the shoulder and enjoy a piece of cake. Well done!
